RAW VEGAN SNICKERS SLICE

It seems like we are all looking for the taste but not the bad ingredients these days. This one should hit the spot for this, yet it conjures up memories of a snickers bar (if you've ever gone there).  You don't have to go for the commercial sugary treat, you can make delicious snacks at home like this one and feel confident that you know what is in it and that it is good for you. Since you don't have to bake it, the recipe becomes even better for you as it's raw and therefore the beneficial nutrients are intact. this will last in your fridge for 4-5 days.  Enjoy!

INGREDIENTS

BASE LAYER

  • 2 cups Almond Meal
  • 2 tbsp Coconut Oil
  • 1 tbsp Xylitol
  • 2 tbsp 100% natural Peanut Butter Paste
  • 1 tsp ground Vanilla Bean or extract
  • pinch Himalayan Salt

MIDDLE LAYER

  1. 3 cups Medjool Dates (remove pips)
  2. 1/3 cup Coconut Oil
  3. 2 tbsp 100% natural Peanut Butter paste
  4. 1 tsp Himalayan salt
  5. 1/2 cup Roasted Peanuts OR Almonds

CHOCOLATE TOP LAYER

  1. 1/4 cup raw Cacao powder
  2. 2 tbsp Xylitol
  3. 1/3 cup Coconut Oil
  4. 1/3 cup Butter 
INSTRUCTIONS
  1. Get a cake tin (tray) and line with baking paper
  2. Blend the base layer ingredients in a food processor until smooth - then spread evenly into the base of your tin
  3. Blend the crunchy middle layer ingredients in a food processor and then put into the cake tin on top of the base layer. Smooth it out evenly.
  4. Put the chocolate layer ingredients into a saucepan over mid-heat until you create a smooth chocolate sauce
  5. Pour the chocolate sauce over the top of the slice
  6. Sprinkle a handful of whole or chopped almond on top
  7. Place in the fridge until the chocolate hardens
